“Single Leg” Salmon
Ingredients:
1 salmon filet [6-8 0z]
1 small yellow or spanish onion [diced]
1 small clove of fresh garlic [diced]
1 sprig of rosemary
1 sprig of thyme
1 cup of favorite salsa
1 diced red bell pepper
Directions:
- Spray a sheet of aluminum foil with your favorite cooking spray.
- Place the salmon filet skin side down on the foil.
- Place 1 sprig of rosemary and 1 sprig of thyme on top of the salmon filet
- Pour 1 cup of your favorite salsa on top of the salmon, covering the entire filet.
- On top of the salsa you will place the diced bell pepper, onion and garlic.
- Season with whatever you like [salt,pepper,onion powder, etc.]
- Loosely roll up the foil leaving it slightly opened at the top to allow the foil packet to vent.
- Place your foil packet on a baking sheet and bake in the oven at 350 degrees for 25-30 minutes.
You can serve the salmon on a bed of rice [white or brown] or by itself.
