Weight Cut Recipe #1 [Single Leg Salmon]

“Single Leg”  Salmon

Ingredients:

1 salmon filet [6-8 0z]

1 small yellow or spanish onion [diced]

1 small clove of fresh garlic [diced]

1 sprig of rosemary

1 sprig of thyme

1 cup of favorite salsa

1 diced red bell pepper

Directions:

  1. Spray a sheet of aluminum foil with your favorite cooking spray.
  2. Place the salmon filet skin side down on the foil.
  3. Place 1 sprig of rosemary and 1 sprig of thyme on top of the salmon filet
  4. Pour 1 cup of your favorite salsa on top of the salmon, covering the entire filet.
  5. On top of the salsa you will place the diced bell pepper, onion and garlic.
  6. Season with whatever you like [salt,pepper,onion powder, etc.]
  7. Loosely roll up the foil leaving it slightly opened  at the top to allow the foil packet to vent.
  8. Place your foil packet on a baking sheet and bake in the oven at 350 degrees for 25-30 minutes.

You can serve the salmon on a bed of rice [white or brown] or by itself.
