Ingredients:
3 pounds ground turkey
2 cans of crushed tomatoes
1 box or can of low sodium veggie broth.
1 large red onion
3 cloves of fresh garlic
1 can of chili or kidney beans
2 large red bell peppers [diced]
2 large poblano peppers [diced]
1 can of sweet corn
1 tablespoon red pepper flakes
1 cup chopped parsley
1 cup chopped cilantro
1 cup chili powder
2 tablespoons cumin
2 packets McCormick low sodium chili seasoning
This makes a large pot for the entire week
Directions:
- Use your favorite cooking spray and cover the bottom of your pot generously.
- Brown your ground turkey over medium heat and drain any fat it may produce.
- Add your diced peppers [red bells and poblano’s] chili beans with the sauce, chopped garlic ,diced red onion and 1 can of sweet corn and stir into the ground browned turkey until all ingredients are incorporated.
- Cover for about 10 minutes and then stir again.
- Add the two cans of crushed tomatoes and veggie broth and stir well. Let simmer over medium heat for about 20 minutes while occasionally stiring.
- Add 1 cup of chili powder, 1 tablespoon of cumin and 2 packets of McCormick’s chili seasoning. Stir well and cover. Let simmer over low to medium heat while stirring occasionally.
- After about 30-45 minutes of simmering and stirring, add the chopped parsley, cilantro and if you like it on the spicy side add the red pepper flakes as well.
- Stir again, cover and let simmer on low for 30 minutes.
- You can garnish with chopped parsley and cilantro.
