Weight Cut Recipe #3 [ Slideby By Shrimp Stir-Fry]

Ingredients:

8-10 cleaned, peeled shrimp [medium size]

1 green bell pepper cut into strips

1/2 teaspoon ground ginger

1 small spanish or yellow onion sliced and cut in half

1 red bell pepper cut into strips

1/2  cup white or brown rice

Seasame oil or cooking spray [your choice]

salt and pepper

1/2 cup of  low sodium soy sauce or sugar free stir fry sauce [your choice]

 

Directions:

Over medium heat,  heat your pan or wok with a tablespoon of sesame oil. [Use cooking spray if you choose]

Add your sliced onion and bell pepper strips to the wok or pan and cook until almost wilted and soft.

Add your 8-10 medium sized shrimp and stir until all the shrimp are pink and mixed in with your veggies.

Add salt and pepper to taste [go light on the salt]

Add  1/2 teaspoon of ground ginger and stir.

Add  soy sauce or stir fry sauce and stir all ingredients for a few minutes.

Serve over your 1/2 cup of white or brown rice.
